Toss the Salad

I feel like most people usually perceive healthy salads (i.e. salads that are not drowning in ranch dressing) as boring and bland. Well that's not the case here, my friends. My favorite salads are ones with a lot going on- fruits, some kind of nut, and a hint of tartness in the dressing. Below are two of my favorite salad recipes I find myself returning to week after week...
This quinoa and arugula salad with lemon vinaigrette takes five minutes to make and is so tasty and filling...
Ingredients: Arugula, roasted hazelnuts, cranberries, quinoa, navel orange, lemon, olive oil, and mustard.
lemon vinaigrette: 
1 lemon
1/2 navel orange
1 tablespoon dijon mustard
a dash of garlic powder
1/2 teaspoon pepper
1/2 teaspoon salt
1/4 cup olive oil
My other favorite salad consists of artichoke hearts, fuji apple, cucumber, red onion, candied pecans, and shaved parmesan cheese (it tastes just as good without the cheese, trust me).
I like to pan-fry the artichoke with a little olive oil, salt and pepper before adding to the salad. 
The dressing is just your standard balsamic vinaigrette:
1/4 cup balsamic vinegar 
1/2 teaspoon of honey or pure maple syrup
1 tablespoon dijon mustard
1/2 teaspoon pepper
1/2 teaspoon salt
1/4 cup olive oil
 I don't like too much dressing in my salad because I'm not about that life, but feel free to add as much as you'd like. These salads are so delicious and super easy to make. You can also substitute any of the ingredients: try pears instead of apples, wheat berries for quinoa, or you can even add some avocado.

This tart lemony one is right up my alley and anything with artichokes and purple onion I'm so THERE! Both of these look incredible! I agree that salads can be super delicious and exciting and are such a nice thing to experiment with during the warmer months. I love adding things like avocado, walnuts, pumpkin seeds, berries, and fresh parmesan to salads :)

These are both well balanced, healthy salads; however, the dressings have WAY too much oil. I guess if you are using only a teeny bit it wouldn't matter as much, but you could make them much healthier by cutting the olive oil to a couple teaspoons (or even tablespoons) and adjusting the other ingredients according. You can even thin it out with water instead of oil. Also don't be too heavy handed with dried fruit (all sugar) or nuts (great in small quantities). This is less for you since you are clearly healthy and thin, and more for people commenting who think these salads are perfectly healthy. If you are watching your weight, take heed of my suggestions!

Olive Oil is a healthy oil, however you are right it is NOT without calories and fat. I am Greek so I love the stuff too much, however there are LIGHT versions offered in the stores now.
Maybe a Light Olive Oil if you are watching your calories, would do the job. JAS.
